Fine Dining Manager
Hospitality Degree preferred but not required. High School diploma or

PURPOSE: Service delivery in an upscale atmosphere demonstrating the grace and hospitality indicative of a superior quality restaurant. Getting to know the membership of Promontory and their preferences and making the Hearth their home dining room. Anticipating needs and being efficient in the delivery.
REGULAR ASSIGNED DUTIES:
Recruit, train, retain, and manage a superior service staff.
Develop and deliver service training to the staff Handle all disciplinary actions related tot the service staff according to company policy Provide input and feedback to the Chef on menu variety and quality Schedule staff in the most efficient way possible in an effort to meet both financial and service standards Meet or exceed sales and profitability goals Assist in the preparation of the annual budgets Insure the cleanliness of the dining room and everything in working order Hold daily shift meetings to train the staff and provide tasting of the menu and specials to insure the staff can sell the menu from an educated palate Coordinate staff needs between Dining room and Catered Events Maintain a wine list indicative of a fine dining establishment Purchase and secure beverage product Maintain the security of all food & beverage inventories Build and maintain membership relationships for the betterment of Promontory and the community's mission.
Deliver on any other reasonable request of senior management Develop work schedules for staff according to needs and staff competencies.
Issue uniforms and enforce dress and grooming standards.
Organize payroll / information when required.
Address any/all guest complaints in a timely and professional manner.
Assist with all service in the Restaurant ensuring the needs of all guests are taken care of.
Attend and participate in weekly manager meetings.
Maintain responsibility for compliance with regards to Utah Department of Alcohol and Beverage Control.
Ensure the quality, presentation and consistency of all menu items.
Ensure that health codes and safety standards are complied with.
Analyze and adjust labor to meet business demands and company standards.
Basic computer skills and competency in the following Microsoft Office including Word, Excel, and Outlook. Jonas club software experience preferred.

PART II JOB SPECIFICATIONS
EDUCATION & SPECIALIZED KNOWLEDGE
EDUCATIONAL REQUIREMENTS OR EQUIVALENT: Hospitality Degree preferred but not required. High School diploma or general education degree (GED) is required with five years experience and/or training in an upscale restaurant environment. Maintain TIPS and ServeSafe certifications.
SPECIALIZED KNOWLEDGE: Sommelier level knowledge or certification. Knowledge of Utah Liquor laws
PREVIOUS EXPERIENCE REQUIRED: A broad background from fast food to fine dining. Five years experience supervising high end table service required.
WORKING KNOWLEDGE TO BE ACQUIRED ON JOB: Abide by Promontory policies and procedures and submit ideas for possible revision.
UNUSUAL PHYSICAL REQUIREMENTS: Must be able to lift a minimum of 75lbs
UNSUAL WORKING CONDITIONS: Must be willing to work various hours, holidays, weekends and long hours on feet.
