JOB OVERVIEW
- Use your culinary expertise to coordinate, plan, and oversee the safe production, preparation and presentation of food for exceptional guest experience and increased flow through. Work with the Executive Chef to improve processes that increase safety and optimize profitability.
- Enable an environment that’s engaging, where motivated people want to join, learn, do their best, and advance. Lead a diverse team by modeling the way, by empowering, and coaching throughout the employment lifecycle.
- Ensure smooth operations, and food and environmental safety, for the kitchen. Ensure labor and food costs fall within budget and kitchen equipment functions properly for associate safety and increased productivity.
ESSENTIAL FUNCTIONS
- Have full control and accountability for leading, developing (training), and inspiring the kitchen team.
- Complying at all times with health & hygiene regulations.
- Ensuring the kitchen hits and maintains pre-set profit margins.
- Ensuring that there is a seamless link between the kitchen and front of house.
- Controlling the kitchen budget and the day-to-day running costs.
- Interviewing and recruiting team members.
- Working to comply with Marriott and Driftwood Standards. Know the BSA audit and ensure compliance.
- Working with the Executive Chef on ordering, scheduling, etc.
- Ensure that all established cooking procedures and recipes are adhered to and report any deviation or problems to the Executive Chef immediately.
- Maintain and enforce consistent sanitation procedures, including but not limited to: cleanliness and organization of all walk-ins, reach-ins, shelves, drawers, and freezers.
- Ensure high level of quality food for employee cafeteria.
- Ensure that all staff reports to work in proper uniform and has nametag & Sheraton pride pin.
- Interact effectively and cohesively with all departments of the hotel.
REQUIREMENTS
One to two years post high school education or equivalent culinary education, with one to two years experience in a related position. Advanced knowledge of the food profession is required, with an understanding of food and beverage management. A food handling certificate is also required. Experiential knowledge in the management of people is expected. Effective written and verbal English communication is required, with a second language helpful. This position requires full mobility and the ability to regularly lift or move up to 25 pounds and frequently lift or move up to 50 pounds.
