Job Overview

As Culinary – Stewarding Manager you will work under the direction of the Director of Culinary/Resort Sr Executive Chef to provide a growth/training environment for Dishwashers and Support Staff throughout the Resort. You will collaborate with Restaurant and Banquet Chefs to achieve the highest standards of quality, housekeeping, and maintenance in all kitchens.  You will directly manage all china, glass, silver, and event equipment inventories and make recommendations on needs.

WHAT YOU’LL DO

  • Manages and directs all Snowbird standards, policies, and procedures in accordance with the Food and Beverage Department.
  • Supervises and coordinates the daily operation of all kitchen stewarding employees. Provides directional flow of kitchen during prep and service.
  • Reports to work on time in the proper uniform. Obeys all company rules and regulations.
  • Ensures standards of appearance and sanitation are met daily.
  • Maintains good safety practices of employees throughout the kitchen.
  • Organize and interpret details as defined on Banquet Event Orders for execution of conference events as well as efficient ordering, timing, and staffing.
  • Assigns, oversees, and evaluates employee work performance. Provides ongoing employee training, rewards, and disciplines as merited. Recommends promotions, transfers, or terminations of employees based on performance evaluations.
  • Responsible for ordering, receipt, and storage of all kitchen equipment to ensure a minimum loss from waste or theft.
  • Manage ordering, receiving, and proper inventory on all products needed for execution.
  • Daily documentation on temperature logs, food storage, and rotation in compliance with local health department in collaboration with the Chef team.
  • Continually trains and develops a team environment to ensure proper communication and quality of products.
  • Travel: Occasional business trips within/outside Utah.
  • Works in collaboration with the Senior Executive Chef to update equipment and kitchen needs.
  • Directly supervises all kitchen equipment needs for special events including Oktoberfest.

WHAT YOU NEED TO GET THE JOB DONE

  • Must have the ability to interact at any time with guests and other employees in a pleasant manner and maintain good working relationships with others and all departments at Snowbird.
  • High School Diploma or equivalent required.
  • College degree in related field preferred.  Additional related work experience may be substituted for education.
  • 1-2 years of job-specific work experience with demonstrated competence.
  • Must be at least 21 years of age.
  • Must have a Food Handler Permit.
  • Serve Safe certified within 30 days of employment.
  • Must demonstrate competency in reading, writing, and arithmetic with accuracy in counting, adding, subtracting, multiplying, and dividing.
  • Must demonstrate proficiency in handling all kitchen equipment.
  • Must demonstrate ability to multi-task, ie, direct staff activities while maintaining interactions between the front and back of house.
  • Must promote teamwork, balance team, and individual responsibilities, exhibit objectivity and openness to other’s views, gives and welcomes feedback, contributes to building a positive team spirit, puts success of team above own interests, ability to grow morale, supports the team’s effort to succeed.
  • Must have good computer skills. Stratton Warren experience helpful.
  • Requires exercise of judgment within policy guidelines and without supervisory approval.
  • Must be able to adapt to changes in the work environment, manage competing demands, change approach or method to best fit the situation, able to deal with frequent changes, delays, or unexpected events.
  • Requires problem solving and initiation of activities within job description and responsibility limitations.
  • Requires strong understanding of other Snowbird operations.

WORK SCHEDULE

  • Shifts vary, from early morning to late evening, weekends, holidays depending on business levels.

WORKING CONDITIONS

  • Must be prepared to stay overnight, if necessary, on occasional times of road closures.
  • May experience unusual stress from high business volumes, deadlines, continual work with public, winter conditions, snow night requirements and commuting to/from Snowbird.
  • Must be able to lift 25+ lbs.
  • Must be able to stand for long periods of time.
  • Must be able to carry trays and other items needed for service.
  • Must demonstrate ability to bend, kneel, handle, reach, grasp and perform repetitive motions.
  • Work is subject to frequent interruptions making continuity and accuracy difficult, frequent exposure to noise.
